Job Description
Reports To: F&B Duty Manager or their designate
Position Overview: Be accountable on a shift basis for the operations of the outlet through effective people management. Support revenue initiatives and maintain cost controls whilst providing total customer satisfaction with all customer contact. This role is ‘hands on’, working as part of a team to provide efficient 5-star service.
Demonstrate ‘ownership’ of the outlet through commitment to the following areas of responsibility.
KEY RESPONSIBILITIES/ DUTIES
- Perform basic day-to-day food and beverage service.
- Opening and Closing of restaurant/Bar or outlet.
- Responsible for the efficient operation and high quality service of Hotel’s bar outlet.
- Serve beverage items with flair and professionalism according to company standards.
- Maintain product knowledge of all drinks, snack and wine lists in order to advise and make recommendations to guests. Use every opportunity to maximize sales.
- Assist in the supervision of security arrangements and property maintenance in line with Hotel policy.
- Observing liquor and other laws and regulations.
- Maintain standards of hygiene for food handling and presentation as prescribed by council / legislative regulations, in accordance with the hotel’s Food Safety Plan.
- Input into development of the outlet.
- Cost control / guest awareness.
- Work with staff to minimise wastage and breakages.
- Work cohesively as a team member.
- Ensure efficient, friendly and professional food and beverage service is provided to all guests.
- Provide for guests and patrons an experience and environment they feel meets their expectations.
- Familiarise yourself with VIP and regular guests to ensure their requests and needs are met.
- Set up and maintain a weekly cleaning schedule for the bar to achieve the highest possible hygiene and cleaning standards.
- Ensure all mise-en-place is completed prior to guests arriving.
- Ensure guest billing is completed accurately following hotel procedure and that correct charges are posted.
- Assist guests with any queries regarding local tourism information, and arrange tours and transportation as required.
- Perform any other duties within the employee’s range of competence as required by management.

Qualifications
- Minimum 12 months experience in a similar role, preferably including 5 star experience.
- Projects professional image at all times through personal presentation / interpersonal skills.
- Desire and ability to train and develop staff.
- Maintains awareness of industry trends in service, product and presentation.
- Initiates contacts and establishes rapport easily.
- Asserts point of view directly yet tactfully.
- Organises time and work efficiently.
- Effective numeracy, verbal and written communication skills.
- Has the ability and willingness to undertake further development.
- Appreciates and maintains an effective outlet for stress.
- Aptitude for developing promotions and marketing.
- Willingness to work weekends and public holidays as part of the job role.
